CYKELKOKKEN was created by chef and bike designer Morten, who has combined his passion for gastronomy, cycling, and outdoor life into a unique concept.
CYKELKOKKEN began in 2002 when Morten converted his old longjohn into the first mobile bike kitchen. The bike kitchen was created to cook outdoors for private events such as garden parties, corporate events, and picnics in the green.
In 2014, the concept of CYKELKOKKEN evolved into what we know today. The desire for greater mobility during bike tours led to a series of changes in the design of the bike kitchen. Over the years, CYKELKOKKEN also opened up to accommodate larger groups and events.

Meet Team Cykelkokken
CYKELKOKKEN is made up of a passionate team that brings gastronomy, cycling, and sustainability to life.
Behind the concept stands a dedicated team of chefs, guides, and assistants, each contributing with expertise, energy, and a spark in their eyes.
We are different types of people with the same drive – we love to cook, we love to cycle, and we love to give our guests an experience they won’t forget.
Our team primarily consists of seasonal chefs and guides who not only master the art of cooking under the open sky but also understand the importance of presence, good vibes, and collaboration. For us, it’s just as much about people as it is about food.

Sara
Meet Sara, a trained culinary chef from Sweden with experience from some of the Nordic region’s most renowned restaurants, including Daniel Berlin Krog, Alouette, and Kadeau. She combines strong expertise with a creative touch and a deep respect for ingredients.
With a passion for wild herbs and open-fire cooking, Sara creates flavor experiences defined by both precision and presence. Within the Cykelkokken team, she plays a central role in developing menus and recipes, while leading the daily kitchen preparations with great professionalism and attention to detail.

Morten
Meet Morten – the founder and the heart of Cykelkokken. He is a creative chef and always ready to share stories and insights from the streets of Copenhagen. As a young chef, he gained experience at top restaurants across Europe, including Savoy in London and InterContinental in Geneva. Later, he carried his passion for food into teaching young people about cooking with a focus on nutrition and healthy eating.
Since 2002, Morten has developed Cykelkokken into the unique rolling food universe we know today – with sustainability, presence, and unforgettable experiences at its core. On the tours, he is both the driving force of the cycling caravan and the warm host who brings together food, people, and stories in a truly special way.

Paul
This is Paul, a dedicated chef. Trained at Falsled Kro, he has built a strong foundation in gastronomy and places great emphasis on sustainability, well-being, and the connection between people and food.
With a bachelor’s degree in Health and Nutrition, he brings depth and intention to every dish. On the tours, he leads the “cycling caravan,” prepares the meals, and ensures that food, flow, and atmosphere come together in perfect harmony.

Tine
Here is Tine, one of our chefs, who uses food as her language.
With a background in theater production, she combines gastronomy with art, creating experiences where food is not only delicious but also meaningful. She has a sharp eye for detail and for turning a meal into an experience.
When Tine joins a tour, you can count on good energy, curiosity, and an ability to make everyone feel at ease. She’s the kind of person who can juggle both herbs and ideas – always ready with a fresh, creative perspective.

Marie
Meet Marie – the structured enthusiast with a deep passion for nature and sustainable food production.
As a trained Forest and Landscape Engineer, Marie combines her academic knowledge with practical experience in project management and event planning. She also oversees finance and coordination at Cykelkokken, while contributing creatively with new ideas.
On the tours, as both sous-chef and cook, she creates a warm and welcoming atmosphere.

Villads
Meet Villads – one of our dedicated team assistants. Still a student, he has been part of the team from a young age, driven by an early and strong passion for food.
On the tours, he gets the chance to work closely with the kitchen while also keeping the guests refreshed with something cool to drink. Villads always shows up with a smile, great spirit, and full focus. He is thorough – with just the right amount of relaxed energy.

Martha
Meet Martha – a dedicated and engaged member of the team, both as an intern handling social media, identity, and brand development, and as a loyal team assistant (“Svajer”) for many years.
On the tours, she ensures that guests feel welcome, relaxed, and well cared for – from filled glasses to smooth, professional service.
She is also the proud daughter of Cykelkokken’s founder, Morten.

Jakob
This is Jakob – one of our energetic team assistants (“Svajere”). He is currently training as a carpenter and brings his curious approach and attention to detail to the tours.
Jakob thrives in nature and ensures that everything runs smoothly while creating a relaxed and pleasant atmosphere for both guests and the team. You can always count on Jakob to keep things running seamlessly while maintaining an easygoing and genuine vibe.

Bjørn
This is Bjørn – an innovation student with a love for new ideas and great flavors. He is one of our talented team assistants (“Svajere”) and has been part of the team for several years. On the tours, he ensures that everyone navigates Copenhagen’s traffic safely, while assisting with both serving and meal preparation.
The kombuchas you enjoy on the tours are actually based on recipes Bjørn developed at the age of 15 – now produced by Kombucha INC for us. He brings a calm, grounded energy to the team and always takes pride in delivering excellent service.
He is also the proud son of Cykelkokken’s founder, Morten.

Ellen
This is the wonderful Ellen – Morten’s 80-year-old mother and the team’s indispensable packer. Every Tuesday, Ellen faithfully shows up to prepare the tour and service bags with calm, organization, and good cheer. She is part of the heart of Cykelkokken and plays a key role in making sure everything is ready when we hit the road.
